Seaweed Salad Recipe
An easy and refreshing nutrient rich salad
- Seaweed (Wakame) or in Ireland use Dulse
- Cucumber sliced or spiralised
- Dash of vinegar, soy sauce, sesame oil, salt and sugar.
- Sesame seeds
Soak the dry seaweed in water for a few minutes to soften. Rinse out. Make sure there's no moisture left. Sprinkle the cucumber with salt.
Mix all the wet dressing ingredients together. Experiment with the taste. But go for about 4 tbsp if vinegar ( I used ACV but you can use sushi vinegar). Add a few drops if sesame oil and soy sauce. Then add salt and sugar to taste.
Et voila. Dress the salad up with your dressing and add some sesame seeds.
This is a very popular dish in Japan and Korea. in Japan it's referred to as Sunomono.
